It is understood that at the beginning of the establishment of the laboratory, six major issues were identified, including the microwave thawing characteristics of meat products, the influence of different microwave conditions on food quality, the detection of heterocyclic amines in microwave foods, and the effects of protein changes in microwave processed foods on their maturity. As the first microwave food research center in China, Sun Dawen Academician Workstation is jointly established by Midea Kitchen and the School of Light Industry and Food Science of South China University of Technology.
