Academician Sun Dayan pointed out that the original intention of the establishment of the Microwave Food Research Center of the United States, as well as the preliminary research topic, is to solve the basic cognitive problems for the development of the microwave food industry.

It is understood that at the beginning of the establishment of the laboratory, six major issues were identified, including the microwave thawing characteristics of meat products, the influence of different microwave conditions on food quality, the detection of heterocyclic amines in microwave foods, and the effects of protein changes in microwave processed foods on their maturity. The quality of the food after microwave treatment changes during storage, and the effect of microwave treatment on volatile flavor substances of food. As the first microwave food research center in China, Sun Dawen Academician Workstation is jointly established by Midea Kitchen and the School of Light Industry and Food Science of South China University of Technology. It is led by Guangdong Province, a member of the European Academy of Humanities and Natural Sciences, a member of the Royal Irish Academy of Sciences, and the International Academy of Food Science.
